Ragi Chocolate Tea‑Cake (Eggless)

Prep: 15 min | Bake: 25–30 min | Makes: one 8″ cake

  • Ragi flour – 1 cup (120 g)
  • Cocoa powder – 3 tbsp (18–20 g)
  • Sugar or jaggery – ½ cup (100 g)
  • Baking powder – 1 tsp; baking soda – ½ tsp; pinch of salt
  • Milk (dairy or plant) – ¾ cup (180 ml)
  • Neutral oil – ¼ cup (60 ml)
  • Vinegar or lemon juice – 1 tsp
  • Vanilla extract – 1 tsp
  1. Preheat oven to 180°C. Line an 8″ tin.
  2. Whisk dry ingredients. In another bowl, whisk milk, oil, vinegar, vanilla, sugar.
  3. Fold wet into dry (don’t overmix).
  4. Bake 25–30 min (toothpick test). Cool fully before slicing.
