Ingredients
- Ragi flour – 1 cup (120 g)
- Cocoa powder – 3 tbsp (18–20 g)
- Sugar or jaggery – ½ cup (100 g)
- Baking powder – 1 tsp; baking soda – ½ tsp; pinch of salt
- Milk (dairy or plant) – ¾ cup (180 ml)
- Neutral oil – ¼ cup (60 ml)
- Vinegar or lemon juice – 1 tsp
- Vanilla extract – 1 tsp
Process
- Preheat oven to 180°C. Line an 8″ tin.
- Whisk dry ingredients. In another bowl, whisk milk, oil, vinegar, vanilla, sugar.
- Fold wet into dry (don’t overmix).
- Bake 25–30 min (toothpick test). Cool fully before slicing.
