Multi‑Millet Soft Roti (Hot‑Water Method, Gluten‑Free)

Prep: 12 min | Cook: 10–12 min | Makes: 8 rotis

  • Multi‑Millet flour – 2 cups (240 g)
  • Hot water – ~1 to 1¼ cups (240–300 ml)
  • Salt – ¾ tsp
  • Oil/ghee – 1 tsp (plus more for serving)
  1. Mix flour and salt. Pour in hot water gradually; mix with spoon, then knead warm to soft dough. Rest 5–7 min.
  2. Divide into 8. Roll between parchment or with light dusting.
  3. Cook on hot tawa till light brown spots; optionally brush with ghee.
