The Litti Chokha experience is deeply rooted in the cultural and culinary traditions of Bihar. One falls in love with the aroma of fresh mustard oil and the earthy fragrance of sattu stuffing. Every bite of that Litti is a delightful surprise, filled with a burst of flavors and a satisfying crunch.
Ingredients For Litti
For Dough:
- 2 cups Wheat Flour
- 2 tsp Ghee
- 1/2 tsp Salt
- Water (as needed)
For Filling (Sattu Mixture):
- 1 cup Sattu (roasted gram flour)
- 1/2 cup Chopped Onion
- 1 tbsp Chopped Ginger
- 1 tbsp Chopped Garlic
- 2 tbsp Chopped Green Chilli
- 2 tbsp Chopped Coriander
- 1/2 tsp Ajwain (carom seeds)
- 1/2 tsp Kalonji (nigella seeds)
- 1/2 tsp Mustard Oil
- 1/2 tsp Amchoor Powder (dry mango powder)
- Salt to taste
- 1 tsp Pickle Masala
Ingredients For Chokha:
- 1 large Brinjal (eggplant)
- 2 medium Tomatoes
- 3 Garlic Cloves
- 1 tbsp Chopped Green Chilli
- 1/2 tbsp Chopped Ginger
- 1 tbsp Chopped Garlic
- Salt to taste
- 1 tbsp Mustard Oil
- 2 tbsp Chopped Coriander
Instructions For Chokha
Step 1: Prepare the Vegetables
- Insert Garlic into Brinjal: Make small insertions on the brinjal and insert the garlic cloves into these slits.
- Roast Vegetables: Roast the brinjal, green chillies, and tomatoes directly on an open flame until the skins are charred.
Step 2: Peel and Mash
- Peel the Vegetables: Transfer the roasted brinjal, chillies, and tomatoes to a bowl of water and peel off their charred skins.
- Mash Together: In a mixing bowl, mash the peeled vegetables together until they are well combined.
Step 3: Season and Mix
- Add Seasonings: Add the chopped onion, salt, mustard oil, chopped ginger, and garlic to the mashed mixture.
- Mix Well: Combine everything thoroughly to make a smooth and flavorful Chokha. Set aside.
Instructions For Stuffing
Step 1: Combine Ingredients
- Mix Sattu Mixture: In a bowl, combine sattu, chopped onion, chopped ginger, chopped garlic, chopped green chilli, chopped coriander, ajwain, kalonji, mustard oil, amchur powder, salt, and pickle masala.
Step 2: Blend Well
- Blend Together: Mix all the ingredients thoroughly to create a uniform stuffing. The mixture should be crumbly but moist enough to hold together when pressed.
Instructions For Litti
Step 1: Prepare the Dough
- Combine Ingredients: In a large bowl, add wheat flour, salt, and ghee. Rub the mixture with your fingers until it resembles breadcrumbs.
- Knead the Dough: Gradually add water and knead into a firm dough. Let the dough rest for 10-15 minutes.
Step 2: Shape and Stuff Littis
- Divide Dough: Divide the dough into small portions and roll each portion into a ball.
- Fill and Seal: Flatten each dough ball, place a spoonful of the sattu stuffing in the center, and gather the edges to seal the dough around the filling. Shape into smooth balls.
Step 3: Cook the Littis
- Cook the Littis: Place the stuffed littis gas stove over or in the open cooker and cook on medium-low flame for 25-30 minutes, turning occasionally to ensure even cooking. The littis should be golden brown and crispy.
Step 4 : Serving Litti
- Break the litti and pour 1-2 spoon of ghee in litti.
- Serve with Baigan ka chokha.
