Ingredients
- Multi‑Millet flour – 1 cup (120 g)
- Curd – 1 cup (240 g) OR 1 tbsp lemon juice + water
- Water – 1 to 1¼ cups
- Ginger–green chilli paste – 1 tsp
- Salt – ¾ tsp
- ENO/fruit salt – 1 tsp (just before cooking)
- Oil/ghee for roasting
Process
- Whisk flour, curd, and water to a smooth, pourable batter; add salt and ginger–chilli.
- Mix in ENO just before making dosas.
- Make thin dosas on hot tawa; roast crisp with a little oil.
